米线是什么What is mixian?

米线是云南人的日常。大米浸泡、磨浆、蒸熟、压条,做成圆润滑爽的米线。传统的「酸浆米线」让米浆自然发酵,软滑里带一丝米香微酸;「干浆米线」晒干保存,久煮不烂。早点、正餐、深夜的最后一碗——在云南,什么时候吃米线都不奇怪。

Mixian are round, silky rice noodles — and in Yunnan they are simply daily life. Rice is soaked, ground, steamed and pressed into strands. The traditional “sour-pulp” kind lets the rice ferment naturally, for a soft bite and a faint, pleasant tang; the sun-dried kind keeps its spring through a long simmer. Breakfast, lunch, or the last bowl of the night: in Yunnan, it is always a good time for mixian.

  • 小锅米线Small-pot mixian xiǎoguō

    昆明街头的一种传统吃法:老米线摊上摆着一排小铜锅,一锅只煮一碗,下肉末、酸腌菜、韭菜、豌豆尖,起锅再淋一勺甜酱油。一般认为它从邻近的玉溪传来,上世纪二十年代在昆明流行开来,如今是昆明街头最有代表性的一碗——最地道的那口,要去昆明的老街小摊上吃。

    A traditional way of eating mixian on the streets of Kunming: old noodle stalls keep a row of small copper pots, each cooking a single bowl — minced pork, pickled greens, garlic chives and pea shoots, finished with a spoon of sweet soy. Generally said to have arrived from nearby Yuxi in the 1920s, it has become Kunming’s signature street bowl — best enjoyed at a street stall in Kunming itself.

  • 焖肉米线Braised-pork mixian mènròu

    慢火焖到酥软的猪肉切片,铺在热汤米线上,肥而不腻,是老昆明的家常味道。

    Slices of slow-braised pork laid over noodles in hot broth — tender, rich, and deeply comforting. An old-Kunming everyday classic.

  • 豆花米线Douhua mixian

    嫩豆花盖在米线上,配肉末、酱油、辣油和葱花,是许多昆明人熟悉的早点。

    Silken tofu pudding spooned over noodles with minced pork, soy, chili oil and scallions — the breakfast many Kunming people grew up on.

  • 凉米线Cold mixian

    天热时的吃法:甜酱油、醋、蒜水、花生碎和辣油一拌,酸甜爽口。

    The warm-weather way: tossed cold with sweet soy, vinegar, garlic water, crushed peanuts and chili oil — bright, tangy and refreshing.

  • 过桥米线Crossing-the-bridge mixian

    它其实源自滇南的蒙自,而不是昆明本地。一碗滚烫的鸡汤上浮着一层油,生鲜肉片、蔬菜和米线依次下进汤里,在桌上现烫现吃。2014 年,蒙自过桥米线制作技艺列入国家级非物质文化遗产名录。

    民间传说:清代有位书生在蒙自南湖的小岛上读书,妻子每天过桥送饭,发现鸡油封住的汤一路都不凉,「过桥米线」由此得名。这是流传甚广的故事,并非确凿史实。

    It actually comes from Mengzi, in southern Yunnan — not from Kunming itself. A bowl of scalding chicken broth, sealed under a layer of oil, arrives alongside raw sliced meats, vegetables and noodles that you slip in yourself, cooking them right at the table. In 2014 the Mengzi preparation technique was listed as part of China’s national intangible cultural heritage.

    The legend — and it is a legend: a Qing-dynasty scholar studied on an island in Mengzi’s South Lake, and each day his wife carried his lunch across the bridge. The layer of oil, she found, kept the soup hot all the way. The story is beloved, not documented history.

  • 饵丝Ersi

    饵丝和米线一样是米做的,做法却不同:大米浸泡、蒸熟,再舂打、揉压成结实的饵块,最后切成细丝。所以它比米线更有嚼劲,带着一股蒸米的香气。腾冲饵丝最有名,昆明人的早点里也少不了一碗焖肉饵丝或小锅饵丝。

    民间传说:明末永历帝一路西逃,在腾冲一带的农家吃到一大盘炒饵块,赞它是「大救驾」,这道菜从此得名。这是当地流传的故事,并非确凿史实。

    Like mixian, ersi are made from rice, but by a different road: the rice is soaked and steamed, then pounded and pressed into a firm rice cake, which is cut into fine ribbons. The result is chewier than mixian, with the fragrance of freshly steamed rice. Tengchong, in western Yunnan, is famous for it, and in Kunming a bowl of braised-pork or small-pot ersi is a breakfast staple.

    The legend — a local story, not documented history: fleeing west at the end of the Ming dynasty, the Yongli Emperor was fed a plate of stir-fried rice cake at a farmhouse near Tengchong and hailed it as the dish that “came to the emperor’s rescue.” It is still called dà jiù jià today.

  • 卷粉Juanfen

    卷粉也是昆明早点的老面孔:米浆蒸成薄薄的米皮,卷成筒、切成段,有的包上肉末、木耳和豆芽,浇上酱汁吃。它和广东的肠粉是亲戚,口味却更咸香浓厚,常配酸菜一类的云南小料。

    Juanfen is another old friend of the Kunming breakfast table: rice batter steamed into thin sheets, rolled up and cut into lengths — sometimes wrapped around minced pork, wood-ear mushroom and bean sprouts, then dressed with a savory sauce. It is a cousin of Cantonese rice-noodle rolls, but heartier and more savory, often served with Yunnan pickles.

春城风土The Spring City

昆明坐落在海拔约一千九百米的云贵高原上,冬无严寒、夏无酷暑,一年四季都有花开,人称「春城」。山茶是昆明的市花,冬末春初开得最盛——我们店标上的,正是一朵山茶。城外是红土高原,滇池波光粼粼;街巷里,人们清早就着一碗米线,不紧不慢地开始一天。

Kunming sits some 1,900 meters up on the Yunnan–Guizhou Plateau. Winters are gentle, summers are mild, and something is always in bloom — which is why it is called the Spring City. The camellia is the city’s flower, at its best from late winter into spring; it is the bloom in our logo. Beyond town lie red-earth highlands and the shimmer of Dian Lake. In the lanes, mornings begin unhurried, over a bowl of noodles.
